Today has been beautiful! ...Many Blessings today - as Always. I enjoyed a beautiful country drive to my parents house this morning (went the back way) - saw the deer cross the road, but didn't hit them :) Saw some big birds that weren't Turkeys, weren't black birds - don't know what they were - but they were big and pretty and in the middle of the road - until I came around that curve. :)

Dad and Mom are both doing well. Had a very nice visit with a highschool friend and her daughters (that I hadn't seen in quite a while). Received a new music video to try out soon. YAY! Singing is definitely my Passion! Roger Barkley - you rock!

Now, the kids are showered and ready for bed (and all caught up with schooling for the day!) ...and I need to be heading to bed now!

Well, as I start this new year of 2012, I am reminded of the many blessings and opportunities offered me through my ministry in 2011 - and can only describe this as Awesome!

As I look back I see that I was blessed by singing to almost 2000 Jamaican school children and telling them the love of Jesus.

My music was sent to Belize and is now being played there to bless those in that country.

I remember that while on a cruise in February - a man came up to me and was so blessed by my music that he bought 3 of my Cd's - and with Poker Chips! Take that Devil!

I was fortunate to record with Cornerstone T.V. out of Pennsylvania - to perform my songs for many to see.

I was asked to return to the Chuck Mathena Center for a Message with Music concert.

I have recorded numerous local television programs for which I am very thankful for.

Now - for 2012 .... a few days ago, I had the priviledge to work at NewSong's Table at WinterJam 2012 - providing their music to the many fans there that night!

So, as you can see, God has provided many opportunities last year and already into this new year!

I look forward to the rest of 2012 and all of the new and exciting opportunities that are to come!

Thank you - to each of you that has supported and prayed for me last year - and please continue into this new year!

I wanted to wish you all a Happy Thanksgiving! I am thankful for God creating all He did in 6 days - and for His son, Jesus Christ loving mankind enough to die for our sins. Power and Love! God Bless You All!

The BEST PIZZA Ever! (Large Batch)

PIZZA DOUGH:

YIELD: 7--- 12-oz

Bread Flour 3 pounds

Salt 1 ounce

Shortening 4 ounces

Yeast* 1 ½ ounces

Water 75° to 80° 1 quart

Makes 5lb 6oz

Method:

Combine the water with the yeast.

Combine all ingredients in mixer. Mix together for ten minutes until dough becomes stretchy, place dough in a oiled bowl, let proof for 1 hour

Pizza Sauce:

Yield 1 gallon

3 quarts canned tomatoes

1 quart tomato paste

2 cups water

3 tsp garlic powder

3 tsp onion powder

3 tsp salt

1\2 tsp black pepper

2 TB basil leaves

2 TB oregano

1\4 cup butter

Method:

Strain tomatoes, reserve juice, chop the pulp. Add to a saucepot with reserved juice, tomato paste, and water. Bring to a boil.

Add remaining ingredients, Simmer stirring occasionally until mixture reduces slightly and thickens.

Taste adjusting seasoning as needed. Store in a stainless steel container.
